Share my passion for cooking

My culinary knowledge is the result of my professional training and career as a chef, together with the natural process of discovery in terms of creative gastronomy and technique that comes from working as a chef.
I wish to share this knowledge in simple, practical and easy to follow classes. First comes the choice of fresh seasonal produce, sourced essentially from small local producers, each of whom is a real expert.
Next is the secret of bringing out the best flavour and taste, which you will discover lies in appropriate "rest" periods for the food and in slow cooking times
You will soon improve your knowledge of the great variety of sauces and juices that can be used, and learn to master the art of marrying flavours to create the most delicate and subtle effects.
You’ll become more adventurous as you learn how to combine contrasting textures, such as crunchy and melting, hot and cold, sweet and savoury, while preserving the flavour of the individual ingredients.
You will learn too how to present your recipe on the plate by arranging shape, colour and texture imaginatively.
Finally, by sampling different flavours, you will learn to create a harmonious ensemble, where gastronomic dishes are enhanced by complementary wines.
It is my wish that every participant should leave with a fresh sense of pleasure in daily food preparation, and a better understanding of the importance of careful selection and preparation of ingredients, acquired at the Culinary Workshop.
